WHAT IS VEGAN PRODUCTION?

In vegan products, simply removing meat, milk or other animal-derived ingredients is not enough. The solidification, flavor, oxidation and baking behavior of plant-based fats, as well as the structural contribution of protein and fiber ingredients, directly affect the final product.

For products such as vegan baklava, croissant, savory pastry, pizza and bread, the recipe, product geometry, target texture and production method are designed together. This helps preserve the processability of the dough and the flow of the filling during production.

A vegan claim does not mean gluten-free or allergen-free. Ingredients, processing aids, labeling and cross-contamination controls are evaluated separately according to the product status and target-market regulations.

THE IMPACT OF VEGAN INGREDIENTS ON PRODUCTION

The choice of plant-based ingredients affects not only flavor, but also dough structure, volume, processability and shelf behavior.

DOUGH STRUCTURE

Comparing conventional and plant-based systems

In traditional flour-based systems, gluten and flour structure can contribute to dough strength, gas formation and shaping behavior.

FAT & TEXTURE

Selecting fats for baking and serving needs

Animal fats may behave differently in terms of flavor, solidification and the texture achieved during baking.

PROTEIN & FIBER

Protecting structure and moisture balance together

Animal proteins can provide different contributions to water retention and structure formation.

FLAVOR & COLOR

Product character starts with the recipe

In conventional products, sugar, flavor and color sources are selected for the target consumer.

CLAIMS & ALLERGENS

Vegan does not mean gluten-free or allergen-free

The product label and process controls are validated together with the product ingredients.

BAKING & SHELF LIFE

The product's target texture and distribution conditions

In conventional products, protein, fat and starch structure directly affect baking results.

A VEGAN PRODUCT REQUIRES A SPECIAL PROCESS

Developing a vegan product is not limited to replacing a few ingredients. Every plant-based fat, protein, fiber and binder contributes differently in terms of water retention, consistency, color, flavor, volume and baking behavior.

For this reason, production equipment should be selected according to the dough structure and designed to avoid unnecessary stress during mixing, sheeting, folding, dividing, shaping and baking.

At ENDOTEK, we analyze the target product's recipe, weight, texture and production scenario to determine the right combination of equipment and process together with you.

FROM R&D TO PRODUCTION

A successful vegan product requires more than a perfect recipe. When material expertise, process knowledge and practical product testing are used together, an idea becomes a producible finished product.

The target consumer and market are defined; the product family, recipe combinations, process parameters, packaging conditions and scalability are evaluated together.
