A ringless classic filled with jam

Berliner

WHAT IS A BERLINER?

A Berliner is a German pastry with no central hole, made from a sweet yeast dough, fried in deep fat, filled with jam or preserves and usually coated with powdered sugar. In Turkey, it has long been known as German Pastry; it is also known as Krapfen in Germany, Bombolone in Italy and Bola de Berlim in Portugal.

The dough is rich in egg, milk and fat; it is formed into balls, fried and, after cooling, filled by injection. The light-colored "bel" band that forms around the middle of the product during frying is accepted as an indicator of the correct temperature and duration.

Donut and Berliner share the same production logic: a rich, pre-fermented dough and a frying step. The difference is that Berliner has no ring shape and is filled after frying—so two product families can be produced on one line.

MANY NAMES AROUND THE WORLD

This treat is not known by a single name even within Germany: in Berlin it is Pfannkuchen, in the north and west Berliner or Berliner Ballen, in Bavaria and Austria Krapfen, in the Rhineland and Palatinate Kräppel. The names change, but the method remains the same.

  • Italy — Bombolone
  • Portugal — Bola de Berlim
  • Poland — Pączek
  • USA & Canada — Bismarck
  • Israel — Sufganiyah
  • Brazil — Sonho

FROM 1485 TO TODAY

The earliest known recipe for a filled yeasted dough appears in the 1485 Nuremberg cookbook Kuechenmeisterei under the name "Gefüllte Krapfen": a ball of dough fried in deep fat and filled with jam. As sugar became more affordable, fruit jams replaced the early cheese, meat and mushroom fillings.

Berliners are traditionally enjoyed on New Year's Eve and during carnival season—at the Rosenmontag parade and on Fat Tuesday. They are a symbol of Hanukkah in Israel and of seaside stalls in Portugal; in Brazil, they have been a bakery staple since the 1920s.

Today they are sold throughout the year: for breakfast, as a convenient snack and at celebrations, in countless variations from classic jam and cream to powdered-sugar glaze and chocolate coating.

KEY POINTS IN BERLINER PRODUCTION

A rich yeasted dough requires gentle handling throughout the line; dough under stress leads to irregular ball formation and uneven expansion during frying. Homogeneous cutting, controlled rounding and balanced proofing ensure the same weight and soft texture in every batch.

The indicator of proper frying is a golden-yellow crust with a light-colored "bel" band around the middle; the correct temperature and duration determine this band. If the band disappears or is uneven, the oil temperature and product floating balance need to be adjusted.

Filling is carried out after cooling with a pump or piping bag and must be paired with the coating: powdered sugar for peach butter; granulated sugar for strawberry, redcurrant and raspberry jams; glaze for other fillings, optionally with rum flavor. Cooling, sugaring and suitable packaging determine shelf life and presentation freshness.

BERLINER VARIETIES

Classic jam-filled Berliner

Classic Jam-Filled

A classic round form filled by injection after cooling. The filling is paired with the topping: powdered sugar for peach butter, granulated sugar for fruit jams and glaze for rum-flavored fillings. The uniformity of the filling dosage determines balance from the first bite.

Cream-filled Berliner varieties

Cream-Filled & Pastry Cream

Examples include Portuguese creme pasteleiro based on egg yolk, Italian vanilla cream and Austrian classic Krems. The filling can be injected or added through a half-cut opening; the cream's consistency and dosage ensure an even appearance even when the product is sliced.

Powdered-sugar-coated Berliner

Powdered Sugar & Granulated Sugar

The coating is applied as powdered or granulated sugar according to product temperature; glaze, colored coating and chocolate are also possible. Its lasting quality on display and compatibility with the filling depend on applying the coating at the right time.
